做(zuò )法:春(chūn )笋切成片(piàn )后加少许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片(piàn ),葱切(qiē )成段。锅烧热(rè ),倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再(zài )加入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖(gài )上(shàng )锅盖焖。
