做法:春笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒(chǎo )1分钟左右。再(zài )加入(rù )生抽、老抽(chōu )、蚝(háo )油翻炒(chǎo )均匀,加入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬(áo )干的时候(hòu )加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅盖焖。
