做法(fǎ ):春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入(rù )生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清水半掩住春笋(sǔn ),盖(gài )上(shàng )锅盖大火煮(zhǔ )开后转中火。煮到(dào )水快熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
