做法:春笋切成片(piàn )后加少许(xǔ )盐捞(lāo )出后用清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右(yòu )。再(zài )加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀(yún ),加入少(shǎo )量清水半掩住春笋,盖(gài )上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
