做法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水(shuǐ )浸泡,生姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片(piàn )、葱段(duàn )翻炒1分钟左右。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水半掩住(zhù )春笋,盖(gài )上(shàng )锅盖大火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入盐(yán ),翻炒均匀(yún )稍收汁时盖上锅盖焖。
