做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜(jiāng )切(qiē )片,葱切成段。锅烧热,倒入2勺油,放入生姜、春(chūn )笋(sǔn )、牛肉片、葱段翻炒1分(fèn )钟左右。再(zài )加入生(shēng )抽(chōu )、老抽、蚝油翻炒(chǎo )均匀,加入少(shǎo )量清水半掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转(zhuǎn )中火。煮到水快熬干(gàn )的时(shí )候加(jiā )入盐,翻(fān )炒均匀稍收汁时盖上(shàng )锅盖焖。
