做法:春笋切成(chéng )片(piàn )后加少(shǎo )许盐捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水半掩住春(chūn )笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅(guō )盖(gài )焖。
